Chervil (Anthriscus cerefolium): umbelliferae similar to parsley in appearance but with a sweeter taste, rich in nuances reminiscent to wild fennel and green anise. More delicate than parsley, so it can be mixed with other aromatics: Chervil is part of the "Herbs of Provence", one of the most famous French blends. The leaves are most used, however, stems and roots can also be used. It is recommended to use raw as, cooking it has a negative effect on its delicate taste.
Sowing goes from March to July, germination takes some time but plant growth is rapid. Important to prune the inflorescences to improve the taste of the leaves.
