    Jiromaru spinach (Spinacia oleracea): classic spinach but in the Japanese version, with the typical characteristics of the species: lover of low temperatures, fast and vigorous growth, delicate taste but rich in nuances. Cultivated mainly in the prefecture of Aichi, a very important center of agrobiodiversity in the country of cherry trees, and custodian of several Slow Food presidia. It has large, lanceolate leaves, it is thought that in ancient times there was a hybridisation between eastern and western varieties. This variety is grown mainly for small businesses, because although it has important organoleptic characteristics, it cannot compete with the massive production of today's commercial spinach.
     The reproduction of the seed is simple, it is enough to allow some plants to go until the hot season, seeds will appear on the stems after flowering, they should be picked when they have a dry appearance. Very
     limited quantities, not to be missed!
