Yukina Savoy (Brassica rapa var pekinensis): an ancient Japanese variety treasured for its fleshy leaves and tender stem. The Yukina Savoy is presented as a larger and "crunchier" version of the Bok Choy. The thick, dark green, shiny leaves are shaped like spoons and grow erect on the light green stems. The plant is vigorous, easy-to-grow and resistant to heat and cold, so it can be grown year-round. It has a delicate taste if harvested young, about 25 days after transplant; taste will tend to mustard if a greater development is allowed, about 45 days after transplant. Although tolerant to heat (depending on the area it can last up to mid-spring) it is recommended to plant in late autumn since it loves the cool season. Unlike Pak Choy, it also tolerates frost well. Extremely versatile, the fleshiness of the leaves and the crunchiness of the stems make it suitable for many preparations, but it can also be consumed raw.
